Barolo Style - Is slightly
fruity, with masses of tannin and body. Barolo remains a serious,
solid mouthful of wine. This variety will be a full bodied,
dry wine, that with some age will develop a nice smooth finish.
Optional - Oak Aging will compliment this variety quite
nicely.
Traditional Food Pairings: Rack of Lamb, Roast Pork,
Steak, Beef Stew, Pasta, Mature and Strong Cheeses, Venison,
& Meat Stew.
Cabernet Sauvignon - This
variety usually has a distinctive fruity taste and aroma. These
wines produce a full bodied, dry table wine. It can be quite
astringent in its youth, but with some aging it can achieve
a velvety richness. Cabernet Sauvignon can be blended with Merlot
to speed up the aging process. This variety responds well to
oak aging and has managed to become the great all-purpose, omnipresent
red wine of the World.
Optional - Oak Aging will compliment this grape variety
quite nicely.
Traditional Food Pairings - Red Meats, Pastas, Chicken,
Roast Lamb & Beef, Roasted Goose, Wild Duck, Assortment
of Cheeses.
Cabernet Shiraz - This special varietal has recently gained a great popularity. Its bouquet and flavour offer a delightful blen of field berries, currants adn plum notes. This vibrant, full bodied, deep red wine is ideal for aging and performs well with grape skins.
Optional - Oak Aging will compliment this variety
quite nicely.
Cabernet / Merlot Blend
- A wine that combines the aggressive style of Cabernet Sauvignon
with the finesse of soft Merlot has become the Wine Maker's
favourite. Multi-dimensional berry flavours are evident in the
bouquet. The addition of the Merlot allows the wine to finish
soft and rich.
Optional - Oak Aging will compliment this varietal quite
nicely
Traditional Food Pairings - Light summer foods, as well
as your hearty winter favourites. Fresh cheeses, European style
meats and dark Belgian chocolate.
California Red - Is made
from a number of different grape varietals including Gamay,
Petite Syrah, Pinot Noir, Carignane, and Zinfandel. California
Red wines are considered to be full bodied, dry red dinner wines
with great pronounced flavour, body, and bouquet, not to mention
their deep red colour.
Chateau De La Reine - Is
considered the most famous wine world wide. Thirteen different
grape varieties are allowed altogether, of which only seven
are used at one time. Some of these Grape Varieties consist
of Grenache, Cabernet Sauvignon, Merlot, Pinot Noir, Petite
Syrah, etc... This variety is a rich scented wine that is flavourful
and tannic in its youth.
Optional - Oak Aging will compliment this variety quite
nicely.
Traditional Food Pairings - Pepper Steak, Grilled Lamb,
Roast Beef.
Chianti Style - These wines
are made from a mixture of grape varietals, mainly "Sangiovese",
but Merlot, Petite Syrah, Cabernet Sauvignon, and a little Malvasia
are used. Chianti wines are known for their fresh fruity flavour,
with a lively acidity. Chianti wines, when they are of Riserva
quality ( aged for 1-3 years ) have more body and backbone.
These are wines that develop with bottle age all kinds of subtle
flavours, even to the extend of resembling old Burgundies or
old Claret wines.
Optional - Oak Aging will compliment this variety quite
nicely.
Traditional Food Pairings - Grilled Peppers, Pasta with
Clams, Lasagna, Veal.
Gamay
- This variety is considered to be a distinctive, fruity, dry,
table wine. Gamay is the varietal used in the production of
"Beaujolais Nouveau" Style of wines, which in turn
can be consumed as a young wine.
Traditional Food Pairings - Grilled Chicken, Light Meats,
Pizza, Pasta, Ham, Eggs, Omelets, Rice Dishes, & Cheese
Dishes.
Jermillon
- Is a blend of Merlot with other grape varietals that gives
the wines that richness that you may not find in other wines.
Lambrusco
- Is one of our European Varietals, which is positively a medium
dry red wine. It has a distinctive cherry like flavour and aroma.
Lambrusco wines can be sweet or dry.
Optional - Wine Conditioner may be added in order to
achieve a medium dry - sweet wine. ( 1 - 2 oz per gallon )
Traditional Food Pairings - Appetizers.
Merlot
- This variety vinted alone has a Cabernet-like flavour and
aroma, with moderate tannin, and acidity. Merlot has a deep
Ruby colour and matures relatively early, compared to a Cabernet
Sauvignon. Merlot can also be blended with Cabernet Sauvignon
in order to soften the wines and shorten the wines aging requirement.
Optional - Oak Aging will compliment this variety quite
nicely.
Traditional Food
Pairings - Roasted Lamb with Rosemary, Beef
Stew, Pheasant in Cream Sauce, Rabbit.
Petite
Syrah
- Can be used as a blending grape, but can also be used for
varietal wines. Petite Syrah will be a dry red wine, with great
depth and strength, and with some complexity.
Optional - Oak Aging will compliment this variety quite
nicely.
Traditional Food Pairings
Pinot
Noir
- Possess a wonderful fruity quality when young. Often like
a melange of red berries, i.e.; strawberry, raspberry. It has
relatively high alcohol, with moderate Tannin and Acidity.
Optional - Oak Aging will compliment this variety quite
nicely.
Traditional Food Parings - Salmon, Duck, Vegetable Casseroles,
Cheese Dishes.
Premium
Red
- Blended as a wine of the region Premium Red shows medium-dark
in the glass, nuances of raspberry in the nose and soft tannins
on the palate. It finishes nicely with subtle fruit flavours.
Traditional Food Pairings - Enjoy it as your red bistro
wine with a variety of foods and cheese.
Ruby
Cabernet
- Is a cross between Cabernet Sauvignon and Carignane. Resulting
in a wine with a brilliant deep Ruby Colour and attractive fruity
aroma. Used to produce a quality dry, red table wine, with a
Cabernet like aroma.
Shiraz
- This superb varietal is gaining great popularity, being prized for its intense berry flavour and bouquet. This fine sipping wine will delight you with subtle ripe cherry, blueberry and plum notes which are at their peak while young.
Optional: Oak Aging will compliment this varietal quite nicely
Traditional Food Pairings: This is truly a dining wine, uniquely complimenting your finest meats and main dishes.
Valpolicella
- This variety may range from a light, cherish red with great
appeal for drinking as a young wine or can be allowed to age
for a fuller wine of considerable bitter-sweet complexity.
Traditional Food Pairings: Pasta with meatballs.
Zinfandel
- Has a distinctive fruity, raspberry-like flavour and aroma.
This variety is also used in the production of Standard red
table wines, or in blends. It is a medium to full bodied, dry
red wine, with a substantial amount of tannin.
Traditional Food Pairings - Beef, Melon, Fruit Salad,
Cheese, Spicy Natchos.

Blanc
De Blancs
- Is considered to be a dry, white wine made from one or more
white grape varietals.
Blush
Chardonnay
- Is a rose wine made from the Chardonnay grape, of which
some red juice is added. Makes a dry table wine.
Optional
- Wine conditioner may be added to sweeten up your wine.
California
White
- Is made from a selection of grape varietals. California White
is a remarkable wine, with it's succulent richness of honey
and hazelnut, melted butter, and sprinkled spice, yet totally
dry. This wine has for generations been thought of, as the World's
leading dry white wine.
Chenin
Blanc
- Is used to produce quality white table wines, usually under
its varietal name " Chenin Blanc ". Chenin Blanc is
refreshingly crisp and dry. This variety can also be used in
sparkling wine production, in blending with premium white table
wines, and for sweet table wines that are usually fruity in
character.
Traditional Food Pairings
- Veal, Pasta with cheese, & Pasta Salad.
Devant
Les Mers
- This varietal resembles a Bordeaux Style of white wine. It
is delicately mellow, dry, crisp aromatic and soft to the palate.
It is best consumed young, but can be enjoyed anytime.
Traditional Food Pairings - Pheasant, and suitable for
lighter meals.
French
Colombard
- Produces a well balanced, fruity wine, commonly used for blending
and occasionally as a varietal, producing quality dry, white
table wines.
Fume
Blanc
- Is considered to be a very dry, white wine, with a hint of
oak. This variety is a blend of Sauvignon Blanc and Semillon
grape varietals.
Optional - Oak Aging will compliment this variety quite
nicely.
Traditional Food Pairings - selection of cheese, Emmentaler,
Brie, Edam, Gouda, Grilled chicken and fish.
Gewurztraminer
- Is German for "spicy grape from Tramin". This is
a wonderfully exotic varietal. Produces a distinctive, fruity,
dry, flavourful and aromatic, white table wine, which has a
spicy richness. This variety has a full bodied Muscat like aroma.
The wine has a delightful balance.
Optional - Wine conditioner may be added to sweeten up
your wine.
Traditional Food Pairings - Fruit Salads, Chinese Food,
Thai, Mexican Food, Poultry, Fish, and Veal in Rich Sauces.
Liebraumilch
- Will consist of six or more different grape varietals, i.e.;
Riesling, Gewurztraminer, etc.. Well balanced and well-suited
to drinking on its own without food. Final results, a wine that
has a dry, soft and fruity finish.
Optional - Wine conditioner may be added to sweeten up
your wine.
Moselle
- A German style of wine which is known to be spicy, fruity
and dry. It is a light in body with a cool, clean flavour. Can
be consumed young. Considered to be a conversational type wine,
that does not necessarily have to be accompanied by food.
Traditional Food Pairings - A lunch time wine, suitable
for light foods and conversation.
Piesporter
- A succulent full-bodied wine, with a touch of spice, and fragrant
aroma. A classic dry wine, with a pleasant softness. Can be
consumed young.
Traditional Food Pairings - Best enjoyed with light foods
and summertime sipping.
Pinot
Blanc
- Is a popular varietal grown in Northern Italy, which produces
a clear, appley, dry, white wine. Aging this white wine variety
can result in a delicious wine with a honeyed fullness.
Traditional Food Pairings - Pates, Shrimp, Shell Fish,
& Goat Cheeses.
Pinot
Chardonnay
- Is actually quite a regal grape, producing the greatest dry
white wines of the World. Chardonnay wines are very compatible
with oak, most chardonnay wines receive some oak treatment,
either during or after fermentation. Chardonnay has fruity aromas
and flavours, ranging from Apple to Tropical Fruits. It can
be fairly rich, ranging from being a medium-bodied to full-bodied
dry white wine.

Pairings - Poultry, Fish, and Veal in Rich
Sauces.
Pinot
Gris
- This variety produces a dry, rich, white wine that will often
mature wonderfully. In Italy this grape varietal produces some
of the most popular dry white wines and sparkling wines. It
is generally a rather light, white wine, slightly fruity, with
good acidity.
Traditional Food Pairings - Mussels, Light Fish, Pasta,
Chicken Salad, Mild Cheeses, and Vegetables.
Premium
White
- A crisp and delicate, French wine, made in the Bordeaux style.
It is a dry white wine with a smooth delicate fruity bouquet
and soft, light flavour.
Traditional Food Pairings - A perfect compliment to shellfish
of any kind.
Riesling
- Is a dry, slightly fruity, light bodied white dinner wine.
It is pale golden in colour. Primarily used to produce quality
white table wines under the varietal label, but may be used
for blending.
Optional - Wine conditioner may be added to sweeten up
your wine.
Traditional Food Pairings - Pork.
Sauvignon
Blanc
- Is a crisp dry white wine with a distinctive character. Sauvignon
Blanc wines are light-bodied to medium-bodied, and are usually
dry. It can also be used for blending with other grape varietals,
such as Semillon.
Traditional Food Pairings - Smelts, Swordfish, &
Pasta with Seafood.
Verdicchio
- This white varietal produces a full-bodied, crisp, dry white
wine, with good aromas and great bouquet. Best enjoyed young
and fresh.
Traditional Food Pairings - Pasta in a seafood sauce,
Veal
Vintage
White
- Is a dry - medium dry dinner wine. Vintage White has a slightly
fruity flavour, and a delicate pale colour. It is full bodied,
and made from a number of white grape varieties, including Chardonnay,
Chenin Blanc, and Semillon. Vintage White develops more complex
flavours with some bottle aging.
Traditional Food Pairings - Veal, Pasta with cheese,
& Pasta Salad
White
Zinfandel
-
The Zinfandel grape varietal is above all versatile. It makes
all different types of wines. White Zinfandel being one of those
varietals. It has a distinctive fruity, raspberry-like flavour
and aroma. A full bodied pink, dry wine made from the red grape
"Zinfandel", but given minimal skin contact.
Optional - Wine conditioner may be added to sweeten up
your wine.
